Truffle Pasta
Ingredients (2 servings)
200 g fresh pasta (tagliatelle or fettuccine)
2 tbsp unsalted butter
50 g grated Parmesan cheese
1–2 tbsp truffle oil (or a few shavings of fresh truffle if available)
Salt & black pepper to taste
Instructions
Cook pasta in salted boiling water until al dente. Reserve ½ cup of pasta water.
In a pan, melt butter over low heat. Add pasta and mix.
Add Parmesan and a splash of pasta water until creamy.
Drizzle with truffle oil (or add fresh truffle shavings).
Season with pepper and serve immediately.
